Cold soaked on skins for 12 hours before gently pressing, cold settling, and transferring to a traditional clay amphora for a wild ferment. Matured in amphora for 6 months on fine lees and a further 3 months in a neutral tank.

This naughty little number hits savoury and smooth, with a delicate acidity to balance the complex layers of spice, citrus and more!
